Hammer and Chisel Recipe: Baked Stuffed Sweet Potato!

                                                                            All potato everything! Who else is potat-obsessed?!
 

Baked Stuffed Sweet Potato

2 sweet potatoes (washed, pierced with a fork)
1 1/2 cups chicken breast (shredded, roasted, boneless, skinless)
1/2 cup black beans
2 tsp extra-virgin olive oil
1/2 tsp ground cumin
1/2 tsp ground coriander
1 dash sea/Himalayan salt
2 Tbsp fresh cilantro *I used dry*


1. Preheat oven to 400F.
2. Bake sweet potatoes 35-45 mins. Cut potatoes almost in half lengthwise.
3. While potatoes are baking, combine chicken, beans, cumin, coriander, and salt in a small saucepan (I added my dry cilantro). Cook over med-high heat stirring constantly for 4-5 mins or until hot.
4. Top potatoes evenly with chicken mixture (sprinkle with cilantro now if using fresh).
